		<description>Thanks, cast iron is pretty much etnessial and does not get the credit it deserves. We go black and blue when we can get really good meat so﻿ we pretty much like to skip the oven&gt;thermometer&gt;steak sauce thing but if you like medium/medium rare or are using average meat you are right on. Side note, those propane turkey cookers work great with cast iron and woks. When I do steak like this I use butter and the entire house fills with smoke, taking it outside helps a lot.
